Application
1). Spice additive: widely used in baked goods, candy, chewing gum, etc. to provide cinnamon characteristic aroma.
2). Preservative: Use its antimicrobial properties to inhibit microorganisms (such as Escherichia coli and Staphylococcus aureus) in food to extend shelf life.
3). Fragrance ingredient: used in perfumes, soaps, shampoos, etc. to give a warm woody fragrance.
4). Antimicrobial agent: used in toothpaste and mouthwash to inhibit oral pathogenic bacteria.
5). Antifungal/Antibacterial: studies have shown it to be effective against Candida albicans, etc. and may be used in topical anti-infective preparations.
6). Insect repellent: repellent against mosquitoes (e.g. Aedes aegypti), used in natural insect repellent products.
7). Insecticide: used as a plant-derived pesticide against storage pests (e.g., rice weevil).
8). Chemical intermediates: used to synthesize cinnamic acid, spice derivatives (e.g. cinnamyl alcohol), etc.
Storage
1). Avoid light: store in brown glass bottles or shaded containers to prevent UV-induced decomposition.
2). TEMPERATURE CONTROL: 4-8°C refrigeration is recommended, long-term storage can be placed at -20°C (avoid repeated freezing and thawing). High temperatures (>25°C) accelerate oxidation.
3). Sealing and inert gas: Nitrogen-filled hermetically sealed storage to minimize contact with oxygen; use bottles with PTFE gaskets for closure.
4). Humidity control: relative humidity ≤ 40%, store in a desiccator to prevent hygroscopic hydrolysis.
5). Solvent selection: if dissolved and stored, prefer anhydrous ethanol (concentration ≥99%) to avoid hydrolysis in the aqueous phase system.
Stability
1). Oxidation: Aldehyde group is easily oxidized to cinnamic acid, can be delayed by adding 0.1% BHT (butylated hydroxytoluene).
2). Hydrolysis: degradation is accelerated when pH>8, more stable under neutral conditions (half-life about 180 days, 25℃).
3). Volatilization loss: boiling point 248°C, but slow volatilization still exists at room temperature (annual loss rate about 3%, sealed conditions).
4). Photolysis: Degradation rate can reach 15% in 48 hours under UVA irradiation, need to strictly avoid light.
Compatibility
5). Metal ions: Fe³+, Cu²+ catalyzed oxidation, avoid contact with metal containers (glass or HDPE recommended).
