Application
1). Regulate blood lipids: ethyl linoleate can reduce the content of cholesterol and triglycerides in the blood, reduce the deposition of lipids in the walls of blood vessels, and help prevent cardiovascular diseases such as atherosclerosis.
2). Promote growth and development: it is the ethyl ester form of the essential fatty acid linoleic acid, which can be transformed into linoleic acid in the human body, participating in the composition and functional regulation of cell membranes, and playing an important role in the development of the brain and nervous system of infants and young children.
3). Antioxidant: It has a certain antioxidant ability, which can remove free radicals in the body, reduce oxidative damage, slow down the aging process, and is beneficial to the prevention of diseases related to oxidative stress such as cancer and diabetes.

Storage
1). Temperature: It should be stored in a low temperature environment, and it is generally recommended that the storage temperature should be below - 18℃ to inhibit its oxidation and hydrolysis reaction and prolong its shelf life.
2). Humidity: The storage environment should be kept dry, with relative humidity controlled below 50% to avoid moisture triggering hydrolysis reaction.
3). Light: It needs to be stored away from light, because light will accelerate its oxidation reaction, and light-avoiding packaging materials such as brown glass bottles or aluminum foil bags can be used.
4). Oxygen: minimize the contact with oxygen, can use nitrogen-filled packaging or add appropriate amount of antioxidant in the storage container, such as butyl hydroxyanisole (BHA), di-tert-butyl-p-cresol (BHT).
5). Packaging requirements: usually packaged in glass, stainless steel or food-grade plastic containers with good sealing performance.
Stability
1). Oxidation reaction: Ethyl linoleate molecule contains several unsaturated double bonds, it is easy to undergo oxidation reaction with oxygen in the air, generating peroxides, aldehydes, ketones and other oxidation products, resulting in the increase of its acid value, darkening of its color, odor, and reduction of its quality and nutritional value.
2). Hydrolysis reaction: under acidic or alkaline conditions, ethyl linoleate will undergo hydrolysis reaction to produce linoleic acid and ethanol. The degree of hydrolysis is related to factors such as the pH, temperature and moisture content of the environment, and the hydrolysis reaction under alkaline conditions is more intense than under acidic conditions.
3). Isomerization reaction: under the action of high temperature, light or catalyst, the double bond in the molecule of ethyl linoleate may undergo an isomerization reaction, changing from the natural cis configuration to the trans configuration. The nutritional value and physiological function of trans fatty acids are different from those of cis fatty acids, and excessive intake of trans fatty acids may increase the risk of cardiovascular disease.
4). Temperature: Elevated temperature accelerates the oxidation, hydrolysis and isomerization reactions of ethyl linoleate, reducing its stability. Under high temperature environment, molecular movement is intensified, reaction rate is accelerated and shelf life is shortened.
5). Light: light can stimulate the double bond in the molecule of ethyl linoleate, making it easier to react with oxygen, triggering oxidation and isomerization reactions, the longer the light intensity and time, the greater the impact on its stability.
6). Metal ions: some metal ions such as iron, copper and manganese can catalyze the oxidation reaction of ethyl linoleate and reduce its stability. Metal ions can accelerate the oxidation process by reacting with peroxides to generate free radicals and triggering chain oxidation reactions.
7). Impurities: impurities in ethyl linoleate such as moisture, free fatty acids, and residual catalyst can affect its stability. Moisture will promote the hydrolysis reaction, free fatty acids will increase the acid value, and residual catalysts may trigger unwanted chemical reactions.
