Application
1). Embedding agent for vitamins, spices, etc. (for microencapsulation); Processing aids; Stabilizers.
2). It has the functions of eliminating and masking special odour; enhancing and improving food structure; reducing and removing bitter and astringent taste; antioxidant; maintaining and improving flavour.
3). It can be used to package food flavouring: make it non-volatile. Covering natural pigments, vitamins, etc. to make them stable and soluble. Eliminate the special odour of aquatic products, livestock products, dairy products, soybean products, etc.
4). As emulsion stabilizer and thickener, Β-CD hydrophobic cavity structure can encapsulate volatile spices, mask and eliminate odour, improve the stability of natural pigments, increase the solubility of insoluble substances.
5). Cyclodextrins have cavities in the centre of the ring structure, and there are -CH- and glucoside-bound oxygen atoms inside, which are sulfur-hydrophilic, and glucose 2-position, 3-position and 6-position -OH groups are hydrophilic, which can complex other molecules into an encapsulated substance through weak van der Waals forces.
