1). Food Additives and Flavorings

Storage
1). Environmental requirements
Avoid light: Store in brown glass bottles or lightproof containers to avoid UV-induced oxidation or decomposition.
Low temperature: It is recommended to store in refrigerator at 2-8℃, high temperature will accelerate volatilization and chemical degradation.
Sealing: Tightly sealed (e.g. with PTFE lined caps) to prevent volatilization and moisture intrusion.
2). Inert gas protection
Batches sensitive to oxidation can be filled with nitrogen or argon to reduce contact with oxygen.
3). Isolation Requirements
Keep away from strong oxidizing agents (e.g. peroxides), strong acids/bases to avoid violent reactions.
Stability
1). Hydrolytic stability
Easily hydrolyzed under acidic or alkaline conditions to produce cis-3-hexenol (leaf alcohol) and acetic acid, need to control the environmental humidity (relative humidity <60%).
2). Oxidative stability
Prolonged exposure to air may oxidize, resulting in the fading of aroma or odor, need to be sealed and stored.
3). Thermal Stability
High temperature (>40℃) will accelerate the volatilization and decomposition, need to avoid long-term exposure to heat.
4). Light Stability
Ultraviolet rays may cause photo-oxidation reaction, keep away from light can extend the shelf life (usually 1-2 years).
